“Good things come to those who wait,” could serve as the tag line for this unassuming joint if only “good” were changed to “delicious.” While Emilia’s build-your-own pizza concept is simple — with choices like sopressata, sausage and roasted peppers — the outcome is delectable, crispy, flavorful and classic. It’s rare that you get a healthy buzz after eating any food described as “New York–style,” but the fresh ingredients make that dream a reality. Heed the rules on the Emilia’s website and plan your hunger as early as 4 p.m., as getting your hands on a pie is not a fly-by-the-seat-of-your pants decision with wait times reaching two hours. There is no cheating the system by ordering a single slice either — it is the whole pie or nothing. The dining area is about as big as a walk-in closet, but Emilia’s takes reservations, if you want a night out. Dinner Tue.-Sat.
