This upscale Uptown newcomer with more gentlemen in hats this side of “Mad Men” offers an innovative take on Southern cooking in an environment that balances urban chic with New Orleans Garden District stateliness. Give in to the temptation of fried chicken — brined, buttermilk drenched, breaded and fried to perfect crunchiness — and the not-to-be-missed “California Collards.” Or make a meal of other “Southern Traditions” and “Southern Specialities” conceived by chef Dean Dupuis and owner Michael LeBlanc that range from barbecued pork ribs and bourbon and molasses lacquered duck to a “garden harvest” vegetable plate with fried green tomatoes. Much the success on the plate owes to the scrumptious sides: smoked Gouda macaroni and cheese, roasted garlic grits, peanut and jalapeno cole slaw, Carolina plantation Hoppin’ John and buttermilk mashed potatoes. Precede your dinner with a cocktail made with one of Picán’s nearly 100 bourbons, and end it with a Georgia pecan chocolate tart topped with buttermilk ice cream and bourbon-laced butterscotch. For the most part, unaffected good cheer is the rule at Picán, a sharply decked 120-seat restaurant that has a lot going for it. Lunch Mon.–Fri., dinner daily, brunch Sun.
