Satisfying bayou-savvy classics include gumbo with okra, andouille sausage, shrimp, tasso and rice; tomatoey jambalaya with noticeable but gentle heat; shrimp Creole; fried chicken and catfish; and muffaletta sandwiches and po’boys. Concessions to East Bay tastes include grilled (instead of steamed) locally made boudin; blackened ahi tuna; creative use of arugula; and vegetarian options.
