Tucked into the narrow space once occupied by Double Rainbow Ice Cream at the busy and parking-challenged Claremont and College avenues intersection, Noodle Theory fits the niche for those who want their quick eats upscaled with fresh, nutritious and flavorful ingredients. Smooth, friendly service and stylish appointments take the edge off the cramped (accommodating fewer than two-dozen diners) and sometimes noisy ambience, in which the main attractions are chef Louis Kao’s creative, occasionally spicy variations on udon and soba noodle dishes: cold salads and steaming broths highlighted by grilled Niman Ranch beef and pork, salmon, chicken and shrimp.
